Walking Taco Casserole

Ingredients (Serves 6–8)

  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning (or 2–3 tbsp homemade)
  • 1 cup water
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel or diced tomatoes with green chiles
  • 2 cups crushed tortilla chips or Fritos
  • 2 cups shredded cheddar or Mexican-blend cheese

Toppings (add after baking):

  • Shredded lettuce
  • Diced tomatoes
  • Sliced jalapeƱos
  • Sour cream
  • Salsa
  • Avocado or guacamole

Instructions

  1. Preheat oven
    • Set to 375°F (190°C).
  2. Cook the meat
    • In a large skillet over medium heat, brown the ground beef.
    • Drain excess grease.
    • Add taco seasoning and water. Simmer 2–3 minutes until thickened.
  3. Add the mix-ins
    • Stir in black beans, corn, and Rotel.
    • Remove from heat.
  4. Assemble the casserole
    • Lightly grease a 9Ɨ13-inch baking dish.
    • Spread half the crushed chips on the bottom.
    • Add the beef mixture evenly.
    • Sprinkle with half the cheese.
    • Top with remaining chips and cheese.
  5. Bake
    • Bake uncovered for 20–25 minutes, until bubbly and cheese is melted.
  6. Top & serve
    • Let cool for 5 minutes.
    • Add your favorite toppings and dig in.
