Caramelized Onion and Cheese Casserole

This is a savory, rich casserole where the onions are baked alongside cheese and other delicious ingredients, allowing them to soften and meld into a flavorful dish.

Ingredients:

  • 2 large onions, thinly sliced (yellow or sweet onions work best)
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup sour cream (or Greek yogurt for a tangy twist)
  • 1/2 cup mayonnaise
  • 1 cup breadcrumbs (preferably panko for a crunchier texture)
  • 1/2 cup butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (optional)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the onions: Slice the onions thinly and set aside.
  2. Sauté the onions (optional): If you like your onions a little more caramelized, you can sauté them first in a skillet with olive oil for 5–7 minutes until soft and slightly golden. If you prefer to keep the onions raw for a sharper bite, skip this step and use them directly in the casserole.
  3. Mix the base: In a large mixing bowl, combine the sour cream, mayonnaise, garlic powder, thyme (if using), salt, and pepper. Stir until smooth.
  4. Add the onions: Stir the raw-sliced onions into the sour cream mixture, ensuring they are evenly coated.
  5. Assemble the casserole: Pour the onion mixture into a greased 9×13-inch casserole dish. Spread it out evenly.
  6. Top with cheese and breadcrumbs: Sprinkle half of the shredded cheese over the onion mixture. In a small bowl, mix the breadcrumbs with the melted butter, then sprinkle the buttered breadcrumbs on top of the cheese layer.
  7. Bake: Preheat your oven to 350°F (175°C). Bake the casserole uncovered for about 30–40 minutes, or until the top is golden brown and the cheese is bubbly and melted.
  8. Garnish and serve: Once out of the oven, garnish with fresh chopped parsley if desired. Let it cool for a few minutes before serving.

Variations:

  • Add protein: For a more filling dish, add cooked chicken, sausage, or bacon crumbles into the onion mixture before baking.
  • Vegetarian version: Stick with the basic recipe or add veggies like mushrooms, spinach, or bell peppers for extra flavor.
  • Add spice: A pinch of cayenne pepper or red pepper flakes can give the casserole a nice kick.
