Honey Garlic Shrimp, Sausage & Broccoli

Ingredients:

  • 1 lb shrimp (peeled and deveined)
  • 1 lb sausage (Italian sausage, smoked sausage, or kielbasa—sliced into 1/2-inch rounds)
  • 2 cups broccoli florets (fresh or frozen)
  • 2 tablespoons olive oil (divided)
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon lemon juice (fresh or bottled)
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions:

  1. Prepare the broccoli: Preheat your oven to 400°F (200°C). Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer and roast in the oven for 15-20 minutes, or until tender and slightly crisped at the edges.
  2. Cook the sausage: While the broccoli roasts, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage slices and cook, turning occasionally, until browned and cooked through (about 6-8 minutes). Once cooked, remove the sausage from the skillet and set it aside.
  3. Cook the shrimp: In the same skillet, add the butter. Once it melts, add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp to the skillet and cook for about 2-3 minutes per side, until they turn pink and opaque. Season with salt, pepper, and red pepper flakes (if using).
  4. Make the honey garlic sauce: Once the shrimp is cooked, reduce the heat to low and add the honey, soy sauce, and lemon juice to the skillet. Stir everything together to combine and coat the shrimp in the sauce. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  5. Combine everything: Once the broccoli is roasted and tender, add it to the skillet with the shrimp and sausage. Stir to combine everything, ensuring the broccoli gets coated in the honey garlic sauce.
  6. Serve: Remove the skillet from the heat. Garnish with fresh parsley and serve with lemon wedges on the side for an extra pop of citrus if you like.
