Here’s a classic Sweet Potato Pie recipe for you! It’s simple but full of that comforting flavor.
Ingredients:
For the filling:
- 2 medium sweet potatoes (about 1 lb)
- 3/4 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup evaporated milk (or regular milk, if you prefer)
- 1/4 cup unsalted butter, melted
For the crust:
- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup (1 stick) unsalted butter, cold and cut into cubes
- 2-3 tbsp ice water
Instructions:
Make the crust:
- Combine flour and salt in a large bowl.
- Add the cold butter and cut it in using a pastry blender, fork, or your fingers until the mixture resembles coarse crumbs.
- Gradually add ice water (1 tbsp at a time) until the dough just comes together.
- Form the dough into a ball, then flatten into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
Cook the sweet potatoes:
- Boil or roast the sweet potatoes.
- For boiling: Peel and cut the sweet potatoes into chunks. Boil in water for 15-20 minutes or until fork-tender. Drain well.
- For roasting: Pierce the sweet potatoes with a fork, wrap in foil, and bake at 400°F (200°C) for 45-60 minutes, or until soft.
- Once cooked, mash the sweet potatoes until smooth. Measure out 2 cups of mashed sweet potato.
Prepare the filling:
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the sugars, cinnamon, nutmeg, ginger, and salt.
- Add the mashed sweet potatoes, eggs, vanilla, evaporated milk, and melted butter. Whisk until smooth and combined.
Assemble the pie:
- Roll out your chilled dough on a lightly floured surface into a circle big enough to fit a 9-inch pie pan.
- Press the dough into the pan, trimming any excess around the edges.
- Pour the sweet potato filling into the pie crust, smoothing the top with a spatula.
Bake:
- Bake the pie in the preheated oven for 50-60 minutes or until the center is set and a toothpick inserted comes out clean. You may want to check the crust halfway through and cover the edges with foil if they start to over-brown.
- Let the pie cool completely before slicing, as it helps the filling set.
Serve with a dollop of whipped cream or a scoop of vanilla ice cream for the ultimate treat! Enjoy your homemade pie! 🍠🥧
