Cucumbers in Sour Cream
Ingredients
- 2 large cucumbers (English or garden cucumbers)
- Β½ cup sour cream
- 1β2 tbsp white vinegar or lemon juice (to taste)
- 1 tsp sugar (optional but traditional)
- Salt & black pepper, to taste
Optional add-ins (very good ideas):
- Fresh dill (chopped)
- Thinly sliced red onion
- Garlic powder or minced garlic
- Splash of milk or cream (for a thinner dressing)
Instructions
- Prep cucumbers
- Peel if desired (leave some skin for texture).
- Slice thinly.
- Lightly salt (optional but recommended)
- Toss cucumbers with a pinch of salt.
- Let sit 10 minutes, then drain excess liquid.
(Keeps the dish from getting watery.)
- Make the dressing
- In a bowl, mix sour cream, vinegar (or lemon), sugar, salt, and pepper.
- Combine
- Fold cucumbers (and onion/dill if using) into dressing until coated.
- Chill & serve
- Refrigerate 20β30 minutes for best flavor.
Tips & Variations
- German-style: Add extra vinegar + lots of dill
- Lighter version: Use Greek yogurt or half sour cream / half yogurt
- Sweet-tangy: Add a little more sugar
- Extra crunch: Add radishes
