Cinnamon Sugar Donut Muffins

Ingredients

Muffins

  • 1¾ cups all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground nutmeg (optional but very donut-y)
  • ½ cup granulated sugar
  • ⅓ cup vegetable oil or melted butter
  • 1 large egg
  • ¾ cup milk (or buttermilk)
  • 1½ tsp vanilla extract

Topping

  • ¼ cup melted butter
  • ½ cup granulated sugar
  • 1½ tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a muffin pan.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and nutmeg.
  3. In another bowl, mix sugar, oil/butter, egg, milk, and vanilla.
  4. Gently fold dry ingredients into wet—don’t overmix.
  5. Fill muffin cups about ¾ full.
  6. Bake 15–18 minutes, until lightly golden and a toothpick comes out clean.
  7. Let muffins cool slightly, then dip tops in melted butter.
  8. Roll in cinnamon sugar while still warm.

Tips & Fun Variations

  • Extra donut feel: Use melted butter instead of oil + don’t overbake.
  • Apple cider version: Replace milk with apple cider + add a pinch of cloves.
  • Stuffed: Add a spoon of apple butter or jam in the center before baking.
  • Mini muffins: Bake 10–12 minutes (dangerously poppable).
