Homemade Apple Butter

Ingredients:

  • 4 pounds apples (about 8–10 medium apples; good choices: Honeycrisp, Gala, Fuji, or a mix)
  • 1 cup granulated sugar (adjust to taste)
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg

  • 1/2 cup apple cider or water

Instructions:

  1. Prepare the apples:
    • Peel, core, and chop the apples into small chunks.
  2. Cook the apples:
    • In a large pot or slow cooker, combine apples and apple cider (or water).
    • Cook over medium heat until the apples are soft, about 20–30 minutes on the stove or 6–8 hours on low in a slow cooker. Stir occasionally to prevent sticking.
  3. Blend to smooth:
    • Use an immersion blender (or transfer in batches to a regular blender) and puree until smooth.
  4. Add sugar and spices:
    • Stir in granulated sugar, brown sugar, cinnamon, cloves, nutmeg, and salt.
    • Continue cooking over low heat, uncovered, stirring frequently, until the mixture thickens and darkens to a rich brown, about 1–2 hours on the stove.
  5. Finish:
    • Stir in vanilla extract. Taste and adjust sweetness or spice if needed.
  6. Store:
    • Cool slightly, then transfer to sterilized jars.
    • Refrigerate for up to 3 weeks, or freeze for up to 6 months.

Tip:
For extra depth of flavor, roast the apples first at 375°F (190°C) for 20–25 minutes before pureeing. This caramelizes the sugars and intensifies the apple flavor.
