Instructions

1. Prep the chicken:

  • Pat the chicken breasts dry with paper towels.
  • Season both sides with salt, pepper, garlic powder, onion powder, paprika, and any other herbs.

2. Layer in the slow cooker:

  • Pour 1 cup chicken broth into the bottom of the slow cooker.
  • Place the chicken breasts on top.
  • Drizzle with olive oil or add butter if using.

3. Cook:

  • Cover and cook on LOW for 3–4 hours or HIGH for 1.5–2 hours, until the chicken reaches an internal temperature of 165°F (74°C).
  • Avoid overcooking—it dries out quickly.

4. Optional shredding:

  • Remove chicken from the slow cooker and shred with two forks if desired.
  • Mix the shredded chicken back into the juices for extra flavor.

5. Serve:

  • Use for tacos, salads, sandwiches, or serve with rice, mashed potatoes, or roasted veggies.
