Scrambled Eggs on Toast

Ingredients

  • 2–3 eggs
  • Salt & pepper
  • A knob of butter or a splash of olive oil
  • 1–2 slices of toast (sourdough if you want to be fancy)

How

  1. Beat the eggs lightly with a pinch of salt.
  2. Melt butter on low heat (this is the secret).
  3. Add eggs and stir gently, slow and patient.
  4. Take off the heat while still slightly creamy.
  5. Spoon over hot toast, finish with pepper.
