Here’s a classic, ultra-moist banana bread with cream cheese icing—easy, cozy, and dangerously good.
Banana Bread
Ingredients
- 3 ripe bananas, mashed
- ½ cup melted butter (or neutral oil)
- ¾ cup brown sugar (or mix brown + white)
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon (optional but recommended)
- 1½ cups all-purpose flour
Instructions
- Heat oven to 175°C / 350°F. Grease a loaf pan.
- Mix mashed bananas + melted butter.
- Whisk in sugar, egg, and vanilla.
- Sprinkle in baking soda, salt, cinnamon; mix.
- Fold in flour just until combined (don’t overmix).
- Bake 50–60 minutes, until a toothpick comes out clean.
- Cool completely before icing (important!).
Cream Cheese Icing 🤍
Ingredients
- 115 g / 4 oz cream cheese, softened
- ¼ cup butter, softened
- 1 cup powdered sugar (adjust to taste)
- ½ tsp vanilla extract
- 1–2 tbsp milk or cream (for spreadable texture)
Instructions
- Beat cream cheese + butter until smooth.
- Add powdered sugar and vanilla.
- Mix in milk a little at a time until silky.
- Spread generously over cooled banana bread.
Optional upgrades (highly encouraged)
