Classic Fried Potatoes & Onions
Ingredients
- 4 medium potatoes (russet or Yukon gold)
- 1 large onion, sliced
- 2–3 tbsp oil or butter (or both 👀)
- Salt & black pepper
- Optional: paprika, garlic powder, or herbs
Instructions
- Prep the potatoes
Slice thin (or dice). Rinse and pat very dry—this = crispiness. - Start the potatoes
Heat oil in a wide skillet over medium-high.
Add potatoes in a single layer. Don’t stir for 3–4 minutes. - Flip & season
Turn potatoes, season with salt & pepper.
Let them brown again. - Add onions
Once potatoes are mostly tender, add onions.
Cook 5–7 minutes, stirring occasionally, until onions are soft and caramelized. - Finish strong
Add butter or spices if using. Taste, adjust seasoning.

- Crowded pan = steamed potatoes (sad). Use a big skillet.
- Cast iron = best crust.
- Want extra crispy? Cover for 5 min at the start, then uncover.
