Cracker Barrel–Style Meatloaf

Ingredients

Meatloaf

  • 1½ lbs ground beef (80/20 works best)
  • 1 cup crushed Ritz crackers (or saltines)
  • ½ cup milk
  • 2 large eggs
  • ½ cup onion, finely diced
  • ¼ cup green bell pepper, finely diced
  • 2 tsp sugar
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder

Glaze

  • ¾ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp yellow mustard

Instructions

  1. Preheat oven
    Set oven to 350°F (175°C).
  2. Mix meatloaf
    In a large bowl, combine all meatloaf ingredients.
    Mix gently — don’t overwork or it’ll be dense.
  3. Shape
    Place mixture into a greased loaf pan or shape into a loaf on a lined baking sheet.
  4. Top with glaze
    Stir glaze ingredients together and spread evenly over the top.
  5. Bake
    Bake uncovered for 1 hour to 1 hour 10 minutes, until internal temp reaches 160°F.
  6. Rest & serve
    Let rest 10 minutes before slicing.
