Ingredients
- 2 tbsp butter or oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled & diced
- 1½ cups corn kernels (fresh, frozen, or canned)
- 2 cups vegetable or chicken broth
- 1 cup milk or cream (use coconut milk for dairy-free)
- ½ tsp salt (to taste)
- ½ tsp black pepper
- ¼ tsp paprika or chili flakes (optional)
- Fresh herbs (parsley or thyme), optional
Instructions
- In a pot, melt butter over medium heat. Add onion and sauté until soft and translucent.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in potatoes and corn. Cook for 2–3 minutes.
- Pour in broth, bring to a boil, then reduce heat and simmer 12–15 minutes until potatoes are tender.
- Lightly mash some of the potatoes in the pot for thickness (or blend half for extra creaminess).
- Add milk/cream, salt, pepper, and paprika. Simmer 5 more minutes.
- Taste and adjust seasoning. Garnish with herbs and serve hot.
