Corn and Potato Chowder

Ooo, cozy choice 😄 Here’s a creamy Corn & Potato Chowder that’s easy, comforting, and hits the spot.

🌽🥔 Corn and Potato Chowder

Ingredients

  • 2 tbsp butter or oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled & diced
  • 1½ cups corn kernels (fresh, frozen, or canned)
  • 2 cups vegetable or chicken broth
  • 1 cup milk or cream (use coconut milk for dairy-free)
  • ½ tsp salt (to taste)
  • ½ tsp black pepper
  • ¼ tsp paprika or chili flakes (optional)
  • Fresh herbs (parsley or thyme), optional

Instructions

  1. In a pot, melt butter over medium heat. Add onion and sauté until soft and translucent.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Stir in potatoes and corn. Cook for 2–3 minutes.
  4. Pour in broth, bring to a boil, then reduce heat and simmer 12–15 minutes until potatoes are tender.
  5. Lightly mash some of the potatoes in the pot for thickness (or blend half for extra creaminess).
  6. Add milk/cream, salt, pepper, and paprika. Simmer 5 more minutes.
  7. Taste and adjust seasoning. Garnish with herbs and serve hot.

Optional add-ins

  • Crispy bacon or smoked sausage
  • Cheddar cheese
  • A splash of cream at the end
  • Green onions on top
