Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin pan with 6–8 cupcake liners.
  2. Make the cupcakes:
    • Melt butter in a saucepan or microwave.
    • Whisk in granulated + brown sugar until smooth.
    • Add eggs and vanilla, mix until creamy.
    • Sift together flour, cocoa, baking powder, and salt. Fold into wet ingredients until just combined.
  3. Fill cupcake liners:
    • Spoon a little batter (~2 tbsp) into each liner.
    • Place 1 heaping tsp peanut butter in the center.
    • Cover with remaining batter, filling about ž full.
  4. Bake 12–14 minutes. The tops should be set but centers soft—don’t overbake!
  5. Cool 5 minutes, then remove from pan. They will be soft and gooey inside.
  6. Dust with powdered sugar or drizzle chocolate if desired.
