Ingredients

Instructions

1. Preheat oven:

  6. Bake 50–60 minutes, until internal temperature reaches 160°F (71°C).

3. Make the caramelized onion gravy:

  1. While the meatloaf bakes, melt butter with olive oil in a skillet over medium heat.
  2. Add sliced onions and cook slowly, stirring often, until golden brown and caramelized (15–20 minutes).
  3. Sprinkle flour over the onions, stir for 1–2 minutes to cook the flour.
  4. Gradually add beef broth while stirring to avoid lumps.
  5. Add Worcestershire sauce and simmer until thickened, 5–10 minutes. Season with salt and pepper.

4. Serve:

  • Slice meatloaf and serve with caramelized onion gravy drizzled on top.

Tips

  • For extra depth, add a teaspoon of Dijon mustard to the meatloaf mixture.
  • You can make the gravy ahead and reheat gently before serving.
  • Leftover meatloaf is excellent in sandwiches or sliced thin for breakfast hash.
