Ingredients
- 1 lb ground beef
- 4–5 cups potatoes, peeled & diced (Yukon Gold or Russet work great)
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken or beef broth
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1 cup milk or half-and-half
- 1 cup shredded cheddar cheese
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried parsley
- Optional: ½ tsp onion powder or garlic powder
Instructions
- Brown the beef
Cook ground beef in a skillet over medium heat until browned. Drain excess grease. - Load the crockpot
Add the beef, potatoes, onion, garlic, broth, cream soup, salt, pepper, paprika, and parsley. - Cook
- Low: 6–7 hours
- High: 3–4 hours
Cook until potatoes are fork-tender.
- Make it creamy
Stir in milk (or half-and-half) and shredded cheese during the last 20–30 minutes. Stir until melted and smooth. - Taste & adjust
Add more salt, pepper, or cheese if your soul demands it.
