Here’s a simple, reliable recipe for chocolate-covered candies that works for nuts, dried fruit, caramels, or centers like peanut butter balls.


Chocolate-Covered Candies (Basic Recipe)

Ingredients

  • 12 oz (340 g) chocolate
    (dark, milk, or semi-sweet; use couverture or good-quality baking chocolate for best results)
  • 2–3 cups centers, such as:
    • Nuts (almonds, peanuts, hazelnuts)
    • Dried fruit (cherries, apricots, raisins)
    • Truffles or ganache balls
    • Caramels
  • Optional toppings:
    • Sea salt
    • Chopped nuts
    • Sprinkles
    • Drizzle of white chocolate

Equipment

  • Microwave-safe bowl or double boiler
  • Fork or dipping tool
  • Parchment or wax paper
  • Baking sheet

Instructions

1. Prep

  • Line a baking sheet with parchment paper.
  • Make sure your centers are dry and at room temperature.

2. Melt (and Temper if Desired)

Quick method (no tempering):

  • Chop chocolate finely.
  • Microwave in 20–30 second bursts, stirring each time, until just melted and smooth.

Optional tempering (for shiny, snappy finish):

  • Melt ⅔ of the chocolate to:
    • Dark: 115–120°F (46–49°C)
    • Milk: 110–115°F (43–46°C)
    • White: 105–110°F (40–43°C)
  • Remove from heat and stir in remaining chocolate until cooled to:
    • Dark: ~88–90°F (31–32°C)
    • Milk/White: ~86–88°F (30–31°C)

3. Dip

  • Drop a center into the chocolate.
  • Use a fork to lift it out, tapping gently to remove excess.
  • Place on parchment.

4. Decorate

  • Sprinkle toppings or salt before the chocolate sets.

5. Set

  • Let set at room temperature (cool, dry place) for 1–2 hours.
  • Refrigerate briefly only if needed (10–15 minutes).

Storage

  • Store in an airtight container:
    • Room temperature: up to 1 week
    • Refrigerated: up to 2 weeks (bring to room temp before serving)

Flavor Variations

  • Mint: Add ¼ tsp peppermint extract per 12 oz chocolate
  • Orange: Add orange zest or orange oil
  • Spiced: Add a pinch of cinnamon or cayenne
  • Crunchy: Mix in puffed rice or crushed cookies
