Here’s a classic Southern sausage gravy that’s rich, peppery, and perfect over biscuits.


🥓 Classic Sausage Gravy

Ingredients

  • 1 lb breakfast sausage (pork; mild or spicy)
  • ¼ cup all-purpose flour
  • 2½–3 cups whole milk
  • Freshly ground black pepper (don’t be shy)
  • Salt, to taste
  • Optional: pinch of cayenne or red pepper flakes

Instructions

  1. Brown the sausage
    • Cook sausage in a large skillet over medium heat, breaking it up.
    • Don’t drain the fat—you need it for the gravy.
  2. Make the roux
    • Sprinkle flour over the sausage.
    • Stir constantly and cook 1–2 minutes until flour is absorbed and slightly golden.
  3. Add milk
    • Slowly pour in milk, stirring constantly.
    • Bring to a gentle simmer.
  4. Thicken & season
    • Simmer 5–8 minutes, stirring, until thick.
    • Add lots of black pepper, salt if needed, and cayenne if using.
  5. Serve hot
    • Spoon generously over warm biscuits.

  • Too thick? Splash in more milk.
  • Too thin? Simmer longer or add a flour–milk slurry.
  • Want deeper flavor? Add ½ tsp butter at the end.
  • No sausage fat left? Add 1 tbsp butter before the flour.

  • Extra creamy: Replace ½ cup milk with heavy cream
  • Herby: Add fresh thyme or sage
  • Mushroom gravy: Add finely chopped mushrooms with sausage
  • Country-style: Add a splash of chicken stock
