Fried Onions, Sausage & Potatoes

Ingredients (2–3 servings)

  • 4 medium potatoes, diced
  • 1 lb sausage (smoked, kielbasa, or brat), sliced
  • 1 large onion, sliced
  • 2–3 tbsp oil or butter
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • Optional: 1 tsp paprika, ½ tsp garlic powder

Instructions

  1. Cook potatoes
    Heat 2 tbsp oil in a large skillet over medium-high heat. Add potatoes and salt. Cover and cook 6–8 minutes, stirring once, until mostly tender.
  2. Crisp potatoes
    Uncover and cook another 4–6 minutes, stirring occasionally, until golden and crispy.
  3. Add sausage
    Add sausage slices. Cook 4–5 minutes until browned.
  4. Add onions
    Add onions and remaining oil or butter. Cook 5–7 minutes, stirring, until onions are soft and lightly caramelized.
  5. Season & serve
    Add pepper and optional spices. Taste and adjust seasoning. Serve hot.

Optional Add-Ons

  • Top with fried eggs
  • Sprinkle cheese at the end
  • Serve with mustard or hot sauce
