Lemon Loaf

Here’s a simple Lemon Loaf recipe that highlights lemon zest for a bright, fresh flavor:


Ingredients

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted and slightly cooled
  • ¼ cup milk
  • Zest of 2 lemons
  • 2 tbsp lemon juice

Optional glaze:

  • ½ cup powdered sugar
  • 1–2 tbsp lemon juice

Instructions

  1. Preheat oven & prepare pan:
    Preheat to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. Mix dry ingredients:
    In a bowl, whisk together flour, baking powder, and salt.
  3. Mix wet ingredients:
    In another bowl, beat sugar and eggs until smooth. Stir in melted butter, milk, lemon juice, and lemon zest.
  4. Combine:
    Gradually fold the dry ingredients into the wet ingredients until just combined. Don’t overmix.
  5. Bake:
    Pour batter into prepared pan and bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.
  6. Optional glaze:
    Mix powdered sugar and lemon juice to a pourable consistency. Drizzle over the cooled loaf.
