These Cheesy Baked Potato Rounds are crispy on the edges, soft in the middle, and absolutely loaded with cheese. Perfect as a snack, side dish, or party bite.


🧀 Cheesy Baked Potato Rounds

Serves: 4–6
Prep Time: 10 minutes
Bake Time: 30–35 minutes


Ingredients

  • 3–4 medium russet or Yukon gold potatoes
  • 2 tbsp olive oil or melted butter
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & black pepper, to taste
  • 1½ cups shredded cheese (cheddar, mozzarella, or a blend)
  • 1/4 cup grated Parmesan
  • Optional toppings: chopped green onions, bacon bits, sour cream

Instructions

  1. Preheat oven
    Preheat to 400°F (205°C). Line a baking sheet with parchment paper.
  2. Slice potatoes
    Wash and slice potatoes into ¼-inch rounds. No need to peel.
  3. Season
    Toss rounds with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  4. First bake
    Arrange potato slices in a single layer.
    Bake 20 minutes, flip, then bake 10 minutes more until lightly golden.
  5. Add cheese
    Sprinkle shredded cheese and Parmesan over each round.
  6. Final bake
    Return to oven for 5–7 minutes until cheese is melted and bubbly.
  7. Serve
    Garnish with green onions or bacon bits. Serve hot with sour cream or ranch.
