Ingredients

  • 3–4 lb chuck roast
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup balsamic vinegar
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar or honey
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp red pepper flakes (optional)
  • 3–4 carrots, chunked (optional)
  • 1 lb baby potatoes or quartered potatoes (optional)

Instructions

  1. Season & sear (recommended)
    Season roast generously with salt and pepper.
    Heat olive oil in a skillet over high heat and sear roast 3–4 minutes per side until deeply browned.
  2. Layer the slow cooker
    Add onions, garlic, carrots, and potatoes to the bottom of the slow cooker. Place the roast on top.
  3. Make the sauce
    Whisk together balsamic vinegar, beef broth, Worcestershire sauce, brown sugar, Dijon, thyme, and red pepper flakes.
  4. Cook
    Pour sauce over the roast.
    Cover and cook:

    • LOW: 8 hours
    • HIGH: 4–5 hours
      until beef is fall-apart tender.
  5. Finish & serve
    Shred or slice beef. Spoon sauce over top.
    Serve with veggies and mashed potatoes, rice, or crusty bread.

  • Remove roast and veggies.
  • Pour liquid into a saucepan.
  • Simmer 10 minutes to reduce, or whisk in 1 tbsp cornstarch + 2 tbsp water to thicken.
