🛒 Ingredients (Serves 6)

  • 6 medium russet potatoes, peeled and diced
  • 6 slices bacon, chopped
  • 1 small onion, finely diced

  • 4 cups chicken broth
  • 2 cups whole milk (or half-and-half for richer flavor)

1️⃣ Cook the Bacon

Use a potato masher to lightly mash some of the potatoes in the pot (leave some chunks for texture).

Stir in:

  • Shredded cheddar
  • Sour cream
  • Half the cooked bacon

Season with salt and pepper to taste.

Simmer 5 more minutes until thick and creamy.
