Cauliflower Cheese

Here’s a classic Cauliflower Cheese—rich, creamy, and perfectly comforting 🧀

Ingredients

  • 1 large cauliflower, cut into florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (warm)
  • 1 tsp Dijon mustard
  • 1½–2 cups sharp cheddar cheese, grated
  • Salt & black pepper, to taste
  • Optional: pinch of nutmeg

Topping (optional but great)

  • ½ cup breadcrumbs
  • 2 tbsp grated parmesan
  • 1 tbsp melted butter

Instructions

  1. Cook the cauliflower
    Boil or steam cauliflower until just tender (not mushy). Drain well.
  2. Make the cheese sauce
    Melt butter in a saucepan over medium heat.
    Stir in flour and cook 1 minute.
    Gradually whisk in warm milk until smooth and thickened.
    Stir in mustard, cheddar, salt, pepper, and nutmeg (if using).
  3. Assemble
    Place cauliflower in a baking dish. Pour cheese sauce over evenly.
  4. Add topping
    Mix breadcrumbs, parmesan, and melted butter. Sprinkle on top.
  5. Bake
    Bake at 400°F (200°C) for 20–25 minutes until bubbly and golden.
  6. Serve hot

Tips & Variations

  • Add crispy bacon, leeks, or broccoli for extra flavor.
  • Mix cheeses (Gruyère, Red Leicester) for depth.
  • For extra creaminess, replace ¼ cup milk with cream.

Perfect as a side for roast dinners or a main with crusty bread.
