Ingredients
- 1 large cauliflower, cut into florets
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk (warm)
- 1 tsp Dijon mustard
- 1½–2 cups sharp cheddar cheese, grated
- Salt & black pepper, to taste
- Optional: pinch of nutmeg
Topping (optional but great)
- ½ cup breadcrumbs
- 2 tbsp grated parmesan
- 1 tbsp melted butter
Instructions
- Cook the cauliflower
Boil or steam cauliflower until just tender (not mushy). Drain well. - Make the cheese sauce
Melt butter in a saucepan over medium heat.
Stir in flour and cook 1 minute.
Gradually whisk in warm milk until smooth and thickened.
Stir in mustard, cheddar, salt, pepper, and nutmeg (if using). - Assemble
Place cauliflower in a baking dish. Pour cheese sauce over evenly. - Add topping
Mix breadcrumbs, parmesan, and melted butter. Sprinkle on top. - Bake
Bake at 400°F (200°C) for 20–25 minutes until bubbly and golden. - Serve hot
