Meat Filling
- 1 tbsp olive oil
- 1 lb (450 g) ground lamb
- 1 onion, finely chopped
- 2 carrots, diced small
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tbsp flour
- 1 cup beef or lamb stock
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary, chopped (optional)
- Salt and black pepper
- ½ cup frozen peas
Instructions
- Cook the potatoes
Boil potatoes in salted water until very tender (15–20 minutes). Drain, mash with butter and warm milk, season well, and set aside. - Make the filling
Heat olive oil in a large pan over medium heat. Add lamb and brown thoroughly, breaking it up. - Add vegetables
Stir in onion and carrots. Cook 5–7 minutes until softened. Add garlic and cook 1 minute more. - Build flavor
Stir in tomato paste and flour. Cook 1–2 minutes, then gradually add stock, Worcestershire sauce, thyme, and rosemary. - Simmer
Let the mixture simmer 10–15 minutes until thickened. Season to taste, then stir in peas. Remove from heat. - Assemble
Preheat oven to 400°F (200°C). Spoon meat mixture into a baking dish. Spread mashed potatoes on top, roughing the surface with a fork for crisp edges. - Bake
Bake uncovered for 20–25 minutes until bubbling and golden on top. Broil for 2–3 minutes if needed for extra browning. - Rest & serve
Let rest 5–10 minutes before serving.
