Ingredients

  • 2–3 medium potatoes (Yukon Gold or Russet)
  • 1½–2 tbsp olive oil
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (smoked if you have it)
  • ½ tsp garlic powder
  • Optional: rosemary, thyme, Parmesan, chili flakes

Instructions

  1. Prep the potatoes
    • Wash and slice into ¼-inch (6 mm) rounds.
    • Soak in cold water 20–30 minutes (optional but recommended for crispiness).
    • Drain and pat very dry.
  2. Season
    • Toss slices with olive oil, salt, pepper, paprika, and garlic powder.
  3. Air fry
    • Preheat air fryer to 380°F (193°C).
    • Arrange potatoes in a single layer (work in batches if needed).
    • Cook 10 minutes, flip, then cook 8–10 more minutes until golden and crisp.
  4. Finish
    • Sprinkle with herbs or Parmesan if desired.
    • Serve immediately.
