Healthy Pickled Beets Recipe 🥗

Pickled beets are a delicious way to enjoy the natural sweetness and nutrition of Beetroot. This healthy version uses simple ingredients, less sugar, and natural vinegar to create a tangy, flavorful side dish that can be added to salads, sandwiches, or grain bowls.


Ingredients

  • 4–5 medium Beetroot, washed and trimmed
  • 1 cup Apple Cider Vinegar (or white vinegar)
  • 1 cup water
  • 1–2 tablespoons Honey or maple syrup (optional for light sweetness)
  • 1 teaspoon Sea Salt
  • ½ teaspoon Black Pepper (whole or ground)
  • 1 teaspoon Mustard Seeds (optional)
  • 1 small sliced Garlic clove (optional)

Instructions

1. Cook the Beets

  1. Place the beets in a pot and cover them with water.
  2. Bring to a boil and cook for about 30–40 minutes until they are tender.
  3. Let them cool slightly, then peel off the skins and slice into rounds or cubes.

2. Prepare the Pickling Liquid

  1. In a saucepan, combine:
    • apple cider vinegar
    • water
    • honey
    • salt
    • pepper
    • mustard seeds
  2. Bring the mixture to a gentle boil and stir until the honey dissolves.

3. Combine and Jar

  1. Place the sliced beets in a clean glass jar.
  2. Pour the hot pickling liquid over the beets until fully covered.
  3. Add sliced garlic if desired.

4. Cool and Refrigerate

  • Let the jar cool to room temperature.
  • Seal and refrigerate for at least 12–24 hours before eating for the best flavor.
