🥗 Cucumber and Tomato Salad

Ingredients (Serves 2–4)

  • 2 medium cucumbers, sliced thinly
  • 3–4 ripe tomatoes, diced or sliced
  • 1 small red onion, thinly sliced (optional)
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or vinegar
  • Salt and pepper to taste
  • Optional: ½ teaspoon dried oregano or a pinch of chili flakes

Instructions

  1. Prepare the vegetables: Wash cucumbers and tomatoes. Slice cucumbers thinly, dice or slice tomatoes, and thinly slice the onion if using.
  2. Mix together: In a large bowl, combine cucumbers, tomatoes, onion, and parsley/cilantro.
  3. Make the dressing: In a small bowl, whisk together olive oil, lemon juice (or vinegar), salt, pepper, and optional oregano or chili flakes.
  4. Combine and toss: Pour the dressing over the vegetables and gently toss until everything is evenly coated.
  5. Serve: Let it sit for 5–10 minutes to let the flavors meld, then serve chilled or at room temperature.

💡 Tips

  • For extra freshness, add a few mint leaves or a small handful of feta cheese.
  • You can also add sliced bell peppers or radishes for extra crunch.
  • Use ripe, firm tomatoes and crisp cucumbers for the best texture.
