Here’s a no-fail, fluffy classic pancake recipe you can whip up half-asleep and still win breakfast.

🥞 Fluffy Pancakes

Ingredients

  • 1½ cups all-purpose flour
  • 3½ tsp baking powder
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1¼ cups milk
  • 1 egg
  • 3 tbsp melted butter (or oil)
  • 1 tsp vanilla (optional but nice)

Instructions

  1. In a bowl, whisk flour, baking powder, sugar, salt.
  2. In another bowl, whisk milk, egg, melted butter, vanilla.
  3. Pour wet into dry. Stir just until combined (lumps = fluffy, don’t fight them).
  4. Heat a lightly greased skillet or griddle over medium heat.
  5. Pour about ¼ cup batter per pancake.
  6. Cook until bubbles form and edges look set (2–3 min), flip.
  7. Cook another 1–2 min until golden.

Pancake Pro Tips

  • 🧈 Crispy edges? Butter the pan lightly between batches.
  • 🫐 Add-ins: blueberries, chocolate chips, bananas—add after pouring batter.
  • 🥛 Too thick? Splash of milk. Too thin? Sprinkle of flour.

Easy Flavor Upgrades

  • Buttermilk swap: use buttermilk + reduce baking powder to 2½ tsp
  • Cinnamon pancakes: add ½ tsp cinnamon
  • Protein boost: replace ¼ cup flour with protein powder
