Here’s a no-fail, fluffy classic pancake recipe you can whip up half-asleep and still win breakfast.
🥞 Fluffy Pancakes
Ingredients
- 1½ cups all-purpose flour
- 3½ tsp baking powder
- 1 tbsp sugar
- ¼ tsp salt
- 1¼ cups milk
- 1 egg
- 3 tbsp melted butter (or oil)
- 1 tsp vanilla (optional but nice)
Instructions
- In a bowl, whisk flour, baking powder, sugar, salt.
- In another bowl, whisk milk, egg, melted butter, vanilla.
- Pour wet into dry. Stir just until combined (lumps = fluffy, don’t fight them).
- Heat a lightly greased skillet or griddle over medium heat.
- Pour about ¼ cup batter per pancake.
- Cook until bubbles form and edges look set (2–3 min), flip.
- Cook another 1–2 min until golden.
