🥘 Creamy Tuscan Mushrooms

🛒 Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 400 g mushrooms (button or cremini), sliced
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 1 cup spinach (fresh)
  • ½ tsp Italian seasoning
  • ¼ tsp red chili flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

👨‍🍳 Instructions

  1. Sauté the mushrooms
    • Heat olive oil and butter in a large pan over medium heat.
    • Add sliced mushrooms and cook for 5–7 minutes until golden.
  2. Cook aromatics
    • Add chopped onion and cook for 2–3 minutes until soft.
    • Stir in garlic and cook for 30 seconds until fragrant.
  3. Add Tuscan flavors
    • Mix in the sun-dried tomatoes, Italian seasoning, chili flakes, salt, and pepper.
  4. Make the creamy sauce
    • Pour in the heavy cream and simmer for 3–4 minutes until slightly thickened.
  5. Add cheese and spinach
    • Stir in Parmesan cheese until melted.
    • Add spinach and cook until wilted.
  6. Finish and serve
    • Taste and adjust seasoning.
    • Garnish with fresh parsley.
