🍤 Shrimp & Asparagus Stir-Fry with Mushrooms

Ingredients

  • 1 lb shrimp, peeled & deveined
  • 1 bunch asparagus, trimmed & cut into 2-inch pieces
  • 8 oz mushrooms (button, cremini, or shiitake), sliced
  • 2 tbsp oil (avocado, peanut, or vegetable)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional but great)

Sauce

  • 3 tbsp soy sauce (or tamari)
  • 1 tbsp oyster sauce (optional, adds depth)
  • 1 tbsp rice vinegar or lemon juice
  • 1 tsp honey or brown sugar
  • ½ tsp sesame oil
  • 1 tsp cornstarch + 2 tbsp water

Instructions

  1. Prep Everything First
    Stir-fries move fast — have all ingredients ready.
  2. Cook the Shrimp
    Heat 1 tbsp oil in a hot skillet or wok. Add shrimp in a single layer. Cook 1–2 minutes per side until just pink. Remove and set aside.
  3. Stir-Fry the Veggies
    Add remaining oil. Sauté mushrooms until they release moisture and brown slightly. Add asparagus and cook 2–3 minutes until crisp-tender.
  4. Add Aromatics
    Stir in garlic and ginger; cook 30 seconds until fragrant.
  5. Bring It Together
    Return shrimp to the pan. Pour in sauce. Toss and cook 1–2 minutes until glossy and thickened.
  6. Serve
    Finish with sesame seeds or green onions if you like. Serve over rice, noodles, or enjoy as-is.

  • Don’t overcook shrimp — they should curl into a loose “C”
  • Swap asparagus for snow peas or broccolini
