Ingredients
- 6 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups potatoes, peeled & diced
- 2 cups carrots, sliced
- 1½ cups celery, sliced
- 3 cups cooked chicken, shredded or diced
- 4 cups chicken broth
- 1 cup corn (frozen or canned)
- 2 cups whole milk or half-and-half
- ¼ cup flour
- 2 tbsp butter
- Salt & black pepper, to taste
- ½ tsp dried parsley
- ¼ tsp thyme (optional)
🔥 Instructions
- Cook Bacon
In a large pot, cook bacon until crisp. Remove and set aside, leaving about 2 tbsp drippings. - Sauté Vegetables
Add onion, garlic, carrots, celery, and potatoes to the pot. Cook 5–7 minutes until slightly tender. - Simmer
Pour in chicken broth. Bring to a boil, reduce heat, and simmer 15–20 minutes until potatoes are fork-tender. - Add Chicken & Corn
Stir in chicken and corn. Simmer 5 more minutes. - Make It Creamy
In a small bowl, whisk milk and flour until smooth. Slowly stir into soup.
Add butter and simmer until thickened (5–10 minutes). - Season & Finish
Add salt, pepper, parsley, thyme, and reserved bacon. Stir well.
