Here’s a cozy Amish Snow Day Soup — creamy, hearty, and perfect for cold weather ❄️🥣
(It’s similar to Amish chicken corn soup but extra comforting.)


🥣 Amish Snow Day Soup

Ingredients

  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled & diced
  • 2 cups carrots, sliced
  • 1½ cups celery, sliced
  • 3 cups cooked chicken, shredded or diced
  • 4 cups chicken broth
  • 1 cup corn (frozen or canned)
  • 2 cups whole milk or half-and-half
  • ¼ cup flour
  • 2 tbsp butter
  • Salt & black pepper, to taste
  • ½ tsp dried parsley
  • ¼ tsp thyme (optional)

🔥 Instructions

  1. Cook Bacon
    In a large pot, cook bacon until crisp. Remove and set aside, leaving about 2 tbsp drippings.
  2. Sauté Vegetables
    Add onion, garlic, carrots, celery, and potatoes to the pot. Cook 5–7 minutes until slightly tender.
  3. Simmer
    Pour in chicken broth. Bring to a boil, reduce heat, and simmer 15–20 minutes until potatoes are fork-tender.
  4. Add Chicken & Corn
    Stir in chicken and corn. Simmer 5 more minutes.
  5. Make It Creamy
    In a small bowl, whisk milk and flour until smooth. Slowly stir into soup.
    Add butter and simmer until thickened (5–10 minutes).
  6. Season & Finish
    Add salt, pepper, parsley, thyme, and reserved bacon. Stir well.

  • Serve with homemade bread or rolls.
  • Soup thickens more as it sits.
