Ingredients

  • 1 lb ground beef
  • 1 (10 oz) can Rotel tomatoes & green chilies, drained
  • 8 oz cream cheese, softened
  • 1–2 cups shredded cheddar cheese (or Mexican blend)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper, to taste
  • Optional toppings: sliced jalapeños, green onions, or crushed tortilla chips

Instructions

  1. Cook the beef
    • In a skillet over medium heat, cook ground beef until browned.
    • Drain excess fat.
    • Season with garlic powder, onion powder, salt, and pepper.
  2. Add the cream cheese & Rotel
    • Lower heat to medium-low.
    • Add softened cream cheese and stir until melted and combined with beef.
    • Stir in the drained Rotel.
  3. Add shredded cheese
    • Fold in shredded cheese until fully melted and creamy.
  4. Serve warm
    • Transfer to a serving dish or serve straight from the skillet.
    • Top with optional jalapeños, green onions, or crushed chips.
