Instructions

  1. Prepare the dough
    • In a bowl, mix the flours, baking powder, salt, and sugar.
    • Add grated carrot and cheese, tossing to combine.
    • Add olive oil and gradually add water, kneading to form a soft, slightly sticky dough. Adjust water or flour if needed.
  2. Rest the dough
    • Cover with a damp cloth and let it rest for 10–15 minutes. This makes it easier to roll out.
  3. Shape the flatbreads
    • Divide dough into 4 equal portions.
    • Roll each portion into a thin circle (6–8 inches) on a lightly floured surface.
  4. Cook the flatbreads
    • Heat a skillet or nonstick pan over medium heat.
    • Brush lightly with oil.
    • Cook each flatbread 2–3 minutes per side, until golden brown spots appear and the cheese melts.
  5. Serve
