🧀 Cheesy Mashed Potato Puffs

Ingredients (makes ~12–15 puffs)

  • 2 cups mashed potatoes (leftover or freshly made, smooth or slightly chunky)
  • 1 cup shredded cheddar cheese (or mix with mozzarella)
  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)
  • 1/4 cup chopped green onions or chives (optional)
  • 1 large egg, beaten
  • 1/2 tsp garlic powder (optional)
  • Salt & pepper, to taste
  • 1/2–3/4 cup breadcrumbs (for coating)
  • Oil spray (for baking or air frying)

Instructions

  1. Preheat & prep
    • Oven: Preheat to 400°F (200°C).
    • Air Fryer: Preheat to 375°F (190°C).
  2. Mix filling
    In a bowl, combine mashed potatoes, shredded cheese, Parmesan, green onions, egg, garlic powder, salt, and pepper. Mix until fully combined.
  3. Form puffs
    Scoop 1–2 tbsp of mixture and roll into balls (or small ovals). Roll each ball in breadcrumbs until coated.
  4. Cook
    Oven: Place on a greased baking sheet. Lightly spray with oil. Bake 18–20 min, turning halfway, until golden and crispy.
    Air Fryer: Spray puffs lightly with oil. Air fry 12–15 min, shaking basket halfway, until golden brown.
  5. Serve
    Let cool 2 minutes, then serve warm. Great with sour cream, ketchup, or ranch.

🌟 Tips

  • Extra gooey: Stuff each puff with a tiny cube of cheese before cooking.
  • Crispier coating: Use panko breadcrumbs instead of regular breadcrumbs.
  • Make ahead: Freeze uncooked puffs on a tray, then cook directly from frozen (add 3–5 min to cook time).
