Ingredients
- 2 lbs russet potatoes, diced into bite-size cubes
- 2 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 lb ground beef (or turkey)
- 1 cup sour cream
- 1 (10 oz) can Rotel, drained
- 1½–2 cups shredded cheddar or Mexican-blend cheese
- ½ tsp garlic powder
- Salt & pepper, to taste
- Green onions, for topping
- Optional toppings: jalapeños, salsa, hot sauce
Instructions
- Roast the potatoes
Preheat oven to 425°F (220°C).
Toss potatoes with olive oil, half the taco seasoning, salt, and pepper.
Spread on a baking sheet and roast 30–35 minutes, flipping halfway, until golden and crispy. - Cook the taco meat
Brown ground beef in a skillet. Drain excess fat.
Add remaining taco seasoning and garlic powder. Set aside. - Make it cheesy
Lower oven temp to 375°F (190°C).
In a large bowl, combine roasted potatoes, taco meat, sour cream, Rotel, and half the cheese. - Bake
Transfer mixture to a greased baking dish.
Top with remaining cheese. Bake 15–20 minutes until bubbly and melty. - Serve
Top with green onions and any extra toppings you love.
