Creamy Slow Cooker Chicken

Ingredients (4 servings):

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme (or Italian seasoning)
  • Salt and pepper, to taste
  • 1 cup sliced mushrooms (optional)
  • 2 tablespoons cornstarch + 2 tablespoons water (for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prep the slow cooker:
    Place the chicken breasts in the slow cooker. Sprinkle with salt, pepper, paprika, and thyme. Add onions, garlic, and mushrooms if using.
  2. Add liquid:
    Pour the chicken broth over the chicken. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until chicken is fully cooked and tender.
  3. Make it creamy:
    About 30 minutes before serving, stir in the heavy cream. If you want a thicker sauce, mix cornstarch with water and stir it in. Cover and cook on HIGH for the remaining 30 minutes until sauce thickens.
  4. Serve:
    Garnish with fresh parsley. Serve over rice, mashed potatoes, or pasta for a full meal.
