Crispy Chicken Strips

Ingredients

Chicken

  • 1½ lb chicken breast tenders (or sliced breasts)
  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder

Breading

  • 1½ cups all-purpose flour
  • ½ cup cornstarch (secret crunch weapon)
  • 1 tsp salt
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½–1 tsp cayenne (optional)

For frying

  • Vegetable or peanut oil

Instructions

  1. Marinate chicken in buttermilk, salt, pepper, paprika, and garlic powder.
    Rest 30 minutes to overnight (longer = juicier).
  2. Heat oil to 350°F (175°C) in a deep skillet or pot.
  3. Mix all breading ingredients in a bowl.
  4. Remove chicken from marinade, letting excess drip off.
  5. Dredge chicken in flour mix, pressing firmly.
    👉 For extra crunch: dip back into buttermilk, then flour again.
  6. Fry in batches 3–4 minutes per side until deep golden and cooked through.
  7. Drain on a wire rack (not paper towels—keeps them crispy).
  8. Sprinkle with a pinch of salt while hot.

  • Cornstarch is non-negotiable.
  • Let breaded chicken rest 5–10 min before frying—helps coating stick.
  • Don’t overcrowd the pan or the temp drops = soggy sadness.

Oven or Air Fryer?
