🌮 Crispy Ground Beef Flautas with Cilantro Avocado Sauce

Flautas are tightly rolled tortillas filled with meat and fried until crispy—popular in Mexican cuisine. This version uses seasoned ground beef and a creamy cilantro-avocado sauce.


🥩 Ingredients

For the flautas

  • 500 g ground beef
  • 10–12 small corn tortillas (or flour tortillas)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Oil for frying
  • Toothpicks (to secure rolls)

For the cilantro avocado sauce

  • 1 ripe avocado
  • ½ cup fresh cilantro
  • 2 tbsp lime juice
  • ¼ cup sour cream or Greek yogurt
  • 1 small garlic clove
  • 2–4 tbsp water (to thin)
  • Salt to taste

👨‍🍳 Instructions

1. Cook the beef

  1. Heat a pan over medium heat.
  2. Add ground beef and cook until browned.
  3. Stir in onion and garlic; cook 2–3 minutes.
  4. Add cumin, chili powder, paprika, salt, and pepper.
  5. Cook until well combined and slightly dry.

2. Fill and roll

  1. Warm the tortillas slightly so they don’t crack.
  2. Place 2–3 tbsp of beef across each tortilla.
  3. Roll tightly and secure with a toothpick.

3. Fry until crispy

  1. Heat about 2–3 cm oil in a skillet.
  2. Fry flautas seam-side down first.
  3. Cook 2–3 minutes per side until golden and crispy.
  4. Drain on paper towels.

🥑 Make the cilantro avocado sauce

Blend together:

  • avocado
  • cilantro
  • lime juice
  • sour cream
  • garlic
  • salt

Add a little water until the sauce becomes smooth and pourable.


🍽️ Serve

Drizzle the sauce over the crispy flautas or use it as a dip.
Optional toppings:

  • shredded lettuce
  • diced tomatoes
  • crumbled cheese
  • extra lime wedges

✅ Tip: For a lighter version, bake the flautas at 200 °C (400 °F) for 18–20 minutes brushed lightly with oil instead of frying.
