Cucumber Carrot Salad

A Cucumber Carrot Salad is a light, refreshing, and healthy dish made with crunchy vegetables and a simple dressing. It’s perfect as a side dish, a quick lunch, or a healthy snack. 🥒🥕✨


Ingredients

  • 1 large Cucumber, thinly sliced
  • 1–2 medium Carrot, grated or julienned
  • 1–2 tablespoons Lemon juice
  • 1 tablespoon Olive oil
  • Salt to taste
  • Black pepper to taste

Optional Add-Ins

  • Chopped Parsley or Cilantro
  • A pinch of Sugar or Honey
  • Sliced Red onion
  • A splash of Vinegar

Instructions

1. Prepare the Vegetables

Wash the cucumber and carrot.
Slice the cucumber thinly and grate or julienne the carrot.

2. Make the Dressing

In a small bowl, mix:

  • Lemon juice
  • Olive oil
  • Salt and black pepper

3. Combine

Place cucumber and carrot in a bowl and pour the dressing over them.

4. Toss and Rest

Mix well and let the salad sit for 5–10 minutes so the flavors combine.
