🧅 French Onion Meatloaf

Ingredients

  • 1½ lb ground beef (or 1 lb beef + ½ lb ground pork)
  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ¾ cup breadcrumbs or panko
  • 2 eggs
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • ½ cup shredded Gruyère or Swiss cheese (optional but 🔥)

Optional Topping

  • Extra caramelized onions
  • Sliced Gruyère or Swiss cheese

Instructions

  1. Caramelize onions:
    Heat butter + olive oil in a skillet over medium-low. Add onions and cook 20–25 minutes, stirring often, until deep golden. Add garlic and cook 30 seconds. Let cool slightly.
  2. Preheat oven to 375°F (190°C).
  3. Mix meatloaf:
    In a large bowl, combine ground meat, caramelized onions, breadcrumbs, eggs, broth, Worcestershire, salt, pepper, thyme, and cheese (if using). Mix gently—don’t overwork.
  4. Shape & bake:
    Form into a loaf and place in a greased loaf pan or on a lined baking sheet.
  5. Top (optional):
    Add extra onions and cheese on top.
  6. Bake for 50–60 minutes, until internal temp reaches 160°F.
  7. Rest 10 minutes before slicing.

  • Swap breadcrumbs for crushed croutons for extra French-onion vibes.
  • Serve with mashed potatoes or buttered egg noodles.
