Fried Cabbage with Bacon, Onion, and Garlic

Ingredients

  • 1 small head green cabbage, chopped
  • 4–5 slices bacon, diced
  • 1 medium onion, thinly sliced
  • 3–4 garlic cloves, minced
  • Salt & pepper to taste
  • ½ tsp crushed red pepper flakes (optional)
  • 1–2 tsp apple cider vinegar (optional, for brightness)

Instructions

  1. Cook the bacon
    In a large skillet over medium heat, cook diced bacon until crispy.
    Remove bacon with a slotted spoon and set aside, leaving the drippings in the pan.
  2. Sauté onion and garlic
    Add onion to the bacon drippings and cook until soft and slightly caramelized, about 4–5 minutes.
    Add garlic and sauté 30–60 seconds until fragrant.
  3. Cook the cabbage
    Add chopped cabbage to the skillet.
    Stir to coat in the bacon fat, onions, and garlic.
    Season with salt, pepper, and optional red pepper flakes.
  4. Simmer
    Cover and cook for 8–10 minutes, stirring occasionally, until cabbage is tender but still slightly crisp.
  5. Finish & serve
    Stir in crispy bacon and a splash of apple cider vinegar if desired.
    Serve hot as a side to fried chicken, pork chops, or your favorite Southern entrée.

  • Use savoy or green cabbage for tender leaves.
