Healthy Pickled Beets Recipe

Ingredients

  • 4–5 medium fresh beets
  • 1 cup apple cider vinegar
  • 1 cup water
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon sea salt
  • ½ teaspoon black peppercorns
  • 1 small garlic clove (optional)
  • 1 small bay leaf (optional)

Instructions

1. Cook the Beets

Wash the beets thoroughly and trim the ends. Place them in a pot of water and boil for about 30–40 minutes until they become tender.

2. Peel and Slice

Let the beets cool slightly, then rub off the skins with your hands or a paper towel. Slice them into thin rounds or small cubes.

3. Prepare the Pickling Liquid

In a saucepan, combine:

  • apple cider vinegar
  • water
  • honey
  • salt
  • peppercorns

Bring the mixture to a gentle simmer and stir until everything dissolves.

4. Pack the Jar

Place the sliced beets into a clean glass jar. Add garlic and bay leaf if using.

5. Pour the Brine

Carefully pour the warm pickling liquid over the beets until they are fully covered.

6. Cool and Refrigerate

Allow the jar to cool to room temperature, then seal it and place it in the refrigerator.

The pickled beets will be ready to eat after 24 hours, but the flavor improves after 2–3 days.
