Honey Garlic Chicken with Mushrooms

Ingredients

  • 1½ lb chicken thighs or breasts (boneless, skinless)
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced (button or cremini)

Honey Garlic Sauce

  • ⅓ cup honey
  • ¼ cup low-sodium soy sauce
  • 4–5 cloves garlic, minced
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 2 tbsp water (optional, for thicker sauce)

Instructions

  1. Season & Sear Chicken
    Season chicken with salt and pepper.
    Heat oil in a large skillet over medium-high heat.
    Sear chicken 4–5 minutes per side until golden. Remove and set aside.
  2. Cook Mushrooms
    In the same skillet, add mushrooms.
    Cook 4–5 minutes until browned and slightly caramelized.
  3. Make the Sauce
    Stir in garlic and cook 30 seconds until fragrant.
    Add honey, soy sauce, and vinegar. Stir well.
  4. Simmer
    Return chicken to the skillet.
    Reduce heat to medium-low, cover, and simmer 10–12 minutes until chicken is cooked through.
  5. Thicken (Optional)
    Stir in cornstarch slurry and simmer 1–2 minutes until sauce thickens and coats the chicken.

Serving Ideas
