Here’s a bright, buttery Lemon Curd Cookies recipe — soft sugar cookies with a luscious lemon curd center. Perfect for spring, tea parties, or whenever you want something fresh and citrusy.


🍋 Lemon Curd Cookies

Soft, tender cookies with a sweet-tart lemon filling.

🛒 Ingredients (Makes ~20–24 cookies)

For the Cookies

  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 ½ cups (190g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

For the Filling

  • ½ cup lemon curd (store-bought or homemade)

Optional Glaze

  • ½ cup powdered sugar
  • 1–2 tbsp fresh lemon juice

👩‍🍳 Instructions

1️⃣ Preheat

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

2️⃣ Make the Dough

In a large bowl, cream butter and sugar until light and fluffy (2–3 minutes).
Beat in egg, vanilla, and lemon zest.

In a separate bowl, whisk flour, baking powder, and salt.
Gradually mix dry ingredients into wet until combined.

3️⃣ Shape

Roll dough into 1-inch balls and place 2 inches apart on baking sheet.
Use your thumb or the back of a spoon to gently press a small indentation into the center of each cookie.

4️⃣ Bake (First Bake)

Bake for 8 minutes, remove from oven, and gently re-press the indentations if they’ve puffed up.

5️⃣ Add Lemon Curd

Spoon about ½ teaspoon lemon curd into each indentation.

6️⃣ Bake Again

Return to oven and bake another 4–6 minutes, until edges are lightly golden.

Cool completely on a wire rack.


🍋 Optional Lemon Glaze

Whisk powdered sugar with lemon juice until smooth.
Drizzle lightly over cooled cookies for extra sweetness and shine.

  • Chill dough 20–30 minutes if it feels too soft.
  • Don’t overfill with curd — it can overflow while baking.
  • For extra lemon flavor, add ½ tsp lemon extract to the dough.
