Ingredients

  • 2 large cucumbers, sliced
  • 1 medium red onion, thinly sliced
  • 2–3 cups tomatoes (cherry tomatoes halved or Roma tomatoes sliced)
  • 1/4 cup white vinegar or apple cider vinegar
  • 2 tbsp olive oil
  • 1–2 tbsp sugar (adjust to taste)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano or dill (optional)
  • Optional add-ins:
    • Fresh dill or parsley
    • Crumbled feta cheese
    • A pinch of red pepper flakes

Instructions

  1. Prepare the vegetables
    • Place sliced cucumbers, onions, and tomatoes in a large bowl.
  2. Make the marinade
    • In a small bowl, whisk together vinegar, olive oil, sugar, salt, pepper, and herbs.
  3. Combine & marinate
    • Pour marinade over vegetables and toss gently to coat.
  4. Chill
    • Cover and refrigerate for at least 30 minutes (1–2 hours is even better).
  5. Serve
    • Toss again before serving. Taste and adjust seasoning if needed.
