Ingredients
- 2 large cucumbers, sliced
- 1 medium red onion, thinly sliced
- 2β3 cups tomatoes (cherry tomatoes halved or Roma tomatoes sliced)
- 1/4 cup white vinegar or apple cider vinegar
- 2 tbsp olive oil
- 1β2 tbsp sugar (adjust to taste)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano or dill (optional)
- Optional add-ins:
- Fresh dill or parsley
- Crumbled feta cheese
- A pinch of red pepper flakes
Instructions
- Prepare the vegetables
- Place sliced cucumbers, onions, and tomatoes in a large bowl.
- Make the marinade
- In a small bowl, whisk together vinegar, olive oil, sugar, salt, pepper, and herbs.
- Combine & marinate
- Pour marinade over vegetables and toss gently to coat.
- Chill
- Cover and refrigerate for at least 30 minutes (1β2 hours is even better).
- Serve
- Toss again before serving. Taste and adjust seasoning if needed.

- For extra crunch, sprinkle cucumbers lightly with salt and let them drain for 10 minutes before mixing.
