Ah yes—meatloaf and potatoes, the ultimate cozy dinner 🥔🍽️. Here’s a classic, no-fuss version that hits all the comfort-food notes.

Classic Meatloaf & Mashed Potatoes

Meatloaf Ingredients

  • 1½ lbs ground beef (80/20 is ideal)
  • 1 cup milk
  • 1 cup breadcrumbs (or crushed crackers)
  • 1 egg
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 Tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning (optional)

Topping

  • ½ cup ketchup
  • 2 Tbsp brown sugar
  • 1 Tbsp mustard (optional but great)

Meatloaf Instructions

  1. Heat oven to 375°F (190°C).
  2. In a large bowl, mix milk and breadcrumbs first (this keeps it juicy).
  3. Add egg, onion, garlic, Worcestershire, seasonings, and beef.
  4. Mix gently—don’t overwork it.
  5. Shape into a loaf and place in a greased pan or on a lined baking sheet.
  6. Mix topping ingredients and spread over the loaf.
  7. Bake 50–60 minutes, until internal temp hits 160°F.
  8. Rest 10 minutes before slicing (important!).

Creamy Mashed Potatoes

Ingredients

  • 2 lbs potatoes (Yukon Gold or Russet)
  • 4 Tbsp butter
  • ½–¾ cup warm milk or cream
  • Salt & pepper to taste
  • Optional: garlic, sour cream, or cream cheese

Instructions

  1. Peel (optional) and cube potatoes.
  2. Boil in salted water until fork-tender (15–20 min).
  3. Drain well.
  4. Mash with butter, warm milk, salt & pepper.
  5. Adjust creaminess to taste.

Pro Tips

  • Want extra flavor? Add grated cheese or BBQ sauce to the meatloaf.
  • Leftovers make elite sandwiches the next day.
  • Serve with green beans, peas, or a simple salad for balance.
