Mongolian Ground Beef Noodles

Time: ~25 minutes | Serves: 4

Ingredients

  • 8 oz noodles (lo mein, spaghetti, udon, or rice noodles)
  • 1 lb ground beef
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced (or ½ tsp ground)
  • ½ cup brown sugar
  • ½ cup soy sauce (low sodium if you like)
  • ½ cup beef broth or water
  • 1 tbsp hoisin sauce (optional but 🔥)
  • 1–2 tsp cornstarch + 2 tbsp water (slurry)
  • 1 tbsp sesame oil
  • ½ tsp red pepper flakes (optional)
  • 3 green onions, sliced
  • Sesame seeds (optional)

Instructions

  1. Cook noodles according to package. Drain and set aside.
  2. Brown beef in a large skillet over medium-high heat. Drain excess fat.
  3. Aromatics: Add garlic and ginger. Cook ~30 seconds until fragrant.
  4. Sauce time: Stir in soy sauce, brown sugar, broth, hoisin, sesame oil, and red pepper flakes. Simmer 2–3 minutes.
  5. Thicken: Stir in cornstarch slurry. Sauce should get glossy and clingy.
  6. Combine: Add noodles and toss until coated.
  7. Finish: Toss in green onions and sprinkle sesame seeds.
