No-bake Peanut Butter Haystacks

No-bake peanut butter haystacks are a simple, sweet treat that combines peanut butter, chocolate, and crunchy noodles. They’re quick to make and perfect for when you need something easy and delicious. Here’s a basic recipe:

Ingredients:

  • 1 cup peanut butter
  • 1 cup semi-sweet chocolate chips (or milk chocolate chips, depending on preference)
  • 2 cups crunchy chow mein noodles (the crispy kind, not the soft ones)
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Melt the chocolate and peanut butter:
    • In a medium saucepan, melt the peanut butter and chocolate chips together over low heat, stirring constantly until smooth. You can also microwave them in 20-second intervals, stirring between, until fully melted.
  2. Mix in vanilla (optional):
    • Once the peanut butter and chocolate are melted and combined, remove from heat and stir in the vanilla extract if you’re using it.
  3. Add the chow mein noodles:
    • Gently fold the chow mein noodles into the peanut butter and chocolate mixture. Stir until all the noodles are coated.
  4. Shape the haystacks:
    • Drop spoonfuls of the mixture onto a baking sheet lined with wax paper or parchment paper. Try to make small mounds, resembling haystacks.
  5. Chill:
    • Place the baking sheet in the refrigerator for about 30 minutes or until the haystacks are set and firm.
  6. Serve and enjoy:
    • Once they’re firm, you can serve them up! Store leftovers in an airtight container in the fridge.
