🍲 Parmesan Italian Sausage Ditalini Soup

This hearty Italian-style soup is packed with savory sausage, small pasta, vegetables, and a rich broth finished with Parmesan cheese. It’s comforting, filling, and perfect for colder days.


🧾 Ingredients

  • 1 lb (450 g) Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 can (14 oz / 400 g) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup ditalini pasta
  • 1 cup fresh spinach or kale (optional)
  • ½–1 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish

👩‍🍳 Instructions

  1. Cook the sausage
    Heat olive oil in a large pot over medium heat.
    Add the Italian sausage and cook until browned, breaking it into small pieces.
  2. Add vegetables
    Stir in onion, carrots, and celery. Cook for about 5 minutes until softened.
    Add garlic and cook for another 30 seconds.
  3. Add broth and tomatoes
    Pour in chicken broth and diced tomatoes.
    Add Italian seasoning and bring to a gentle boil.
  4. Cook the pasta
    Stir in the ditalini pasta and cook according to package instructions (about 8–10 minutes).
  5. Add greens and cheese
    Stir in spinach and simmer for 1–2 minutes.
    Add grated Parmesan cheese and mix until melted into the soup.
  6. Season and serve
    Taste and adjust with salt and pepper.
    Garnish with extra Parmesan and fresh herbs.

🍽️ Serving Suggestions

  • Serve with garlic bread or crusty Italian bread.
  • Sprinkle extra Parmesan on top for richer flavor.
  • Add red pepper flakes for a spicy kick.

💡 Tip:
If you plan to store leftovers, cook the pasta separately and add it when serving. This keeps the pasta from becoming too soft in the soup.
